Wet Ingredients:
Directions:
- 3 eggs
- 3 ½ c sugar
- 29 oz canned pumpkin
- 1 c oil (¾ c when using flax)
- 5 c flour (or 1 ½ c wheat flour, ½ c flax flour, and 3 c all purpose)
- 1 tsp cinnamon
- ½ - 1 tsp cloves
- ½ tsp nutmeg
- 1 ½ tsp salt
- 4 tsp baking soda
- 1 bag chocolate chips (optional)
Directions:
- Mix together wet ingredients.
- Stir in dry ingredients.
- For bread:
- Pour into 3 medium loaf pans
- Bake at 350° for 1 hour (check with toothpick)
- For muffins:
- Pour into 3 regular muffin pans and 1 mini muffin pan
- Bake at 350° for 25-30 minutes (check with toothpick)
